BESS-THE-CHAI-WALLAH CHAI MIX
3 tbs cardamom pods
1 tbs cloves
4 star anise
1 tsp black pepper
1 tbsp fennel
3 cinnamon sticks
250g black tea
Pound all the spices (buy whole and organic, where possible) in a mortar and pestle (you might need to do this in batches). Put spices and tea in a big jar and shake well to combine. Keep in a dry place.
Grate a thumb sized knob each of fresh ginger and turmeric into a small pot (I also have an emergency stash of powdered ginger and turmeric when there’s no fresh available).
Add half water / half milk of your choice (my favourite is coconut!) and 1 heaped tsp chai mix for each cup you’re making (or to taste - add more if you want it stronger). You can always buy a chai mix if short of time ( I recommend Mayde Tea ).
Bring chai to the boil, then turn off the heat. Strain into your favourite mug with your choice of sweetener (I love a little bit of local honey, but I know heating honey isn’t great!).
